3 Chefs Compete/The Last
Supper
October 13
Last week, a challenge win for Tennille lead to
the kitchen's best service ever. The chefs got to celebrate it with their
families, even as Dave's wrist started to act up again. Unfortunately, Tennille
didn't get to join in the celebration, because she was eliminated right after
service. Tonight, the three will become two... and those two will become one.
The next day, after getting the much needed
energy burst... Dave is still awake, trying to get his bearings up. He's nervous
that he won't be able to take down Ariel and Kevin. Everyone's so close. No one
wants to go home now.
The next challenge will involve world cuisine...
Ariel is going to China. Dave is headed to India. That leaves Kevin with Mexico.
Now to cook your entree. You have 45 minutes. Dave's going to put an Indian
twist on a dish he knows how to make. Same with Kevin.
Kevin: Orange & Cumin-Marinated Pork Tenderloin
with Tequila Vinaigrette and Mole Sauce
Ariel: Lychee-Marinated Duck Breast on Chinese Noodles
Dave: ... still no idea. He decides on pork.
Judging the plates today will be Indian chef
Vikas Khanna, executive chef Thomas Ortega of Ortega 120, and Eddie Wong, chef
at Mr. Chow in Beverly Hills.
Ariel's dish was interesting, but unbalanced, and
the sauce is too watery. Kevin's dish... forgot the mole sauce. Woops. The sauce
was needed to tie the dish together. Finally, Dave presents... Mung Bean Puree
with Seared Pork Tenderloin. And pork is not very important in Indian cuisine.
Not a lot of Muslims eat pork. The good news is that the spices blend together.
For a first try, not bad.
Winner: Dave. By a score of 3-0.
Dave is going to enjoy dishes by each of the
three maestros. Not only that, he's going to get a set of the cookware that
Hell's Kitchen has been using all season long. The others are going to prep for
dinner the entire place, because Hell's Kitchen is open tonight.
And that mole would've really been the key.
Joining Dave with his reward are his sister and
fiancee. Their dishes include shrimp curry, something with a mole sauce, and
chicken chow mein. Dave, you have resisted the frozen path.
Now comes the hard part. In the round of three,
each chef will take a turn at the pass. While that's happening, Scott and
Heather will be asked to sabotage a dish or two without their knowledge. They'll
have to be extremely up on their stuff in order to pass muster with Ramsay AND
get that shot in the final. Cook your hearts out, because you're that close.
"JP... Let's go. Open Hell's Kitchen, please."
They start out like gangbusters, and Ramsay
starts out with Kevin on the hot plate. He's off to a strong start, when Scott
passes him a halibut for a sea bass. Kevin spots it and tells Scott to do it
again. Ariel slows down the pace, and her lamb is overcooked. She's really off
her game. Because of that, no food is reaching the customers.
One hour into service... and Kevin's turn at the
pass has taken a turn for the worse. Ariel's all over the place as Dave takes
his turn at the pass. Dave decides to turn it up a notch. The chefs may not like
it, but food is moving out. Next, Scott substitutes spinach puree for asparagus
puree... and STOP. Dave thought it was off, but he couldn't tell. And... STOP IT
AGAIN. Ramsay tells him to focus on his dishes, because that tuna has no sear on
it. The next tuna.. stone cold. Dave brings it back then. Diners are enjoying
their entrees...
... and it's Ariel's time at the pass. First up,
Heather subs out parsnips for mashed potatoes.... and STOP. Ariel's pushing out
entrees, while Scott subs out salmon for sea bass... Spotted. But Ariel is
yelling order after order after order... No one knows where she's at. Kevin's
dragging. Ariel's running it, and they're running her. Ramsay has decided to
intervene. She's convinced that Kevin's dragging.
Ariel returns to the kitchen as the chefs ready
for dessert.
At the end of service... this will be Ramsay's
toughest challenge yet, so he enlists the chefs' help in deciding who would not
be a right fit in the final. Kevin thinks that Ariel did the worst. So does
Dave, but he is also convinced that Kevin is a little more than dragging.
Kevin thinks Ariel shouldn't go to the final.
She's been in danger too many times. Ariel thinks Kevin didn't fully have her
back. Dave decided... that he was most loss when Ariel was at the pass.
But Ramsay didn't think he was helped. At all.
Kevin says that he's a very strong person. Ariel
says that she will run the Araxi. Dave has led himself throughout the
competition. He can run a kitchen.
So who's going to the final? It's going to be...
DAVE LEVEY... and ... KEVIN COTTLE! Unfortunately, it's time for Ariel to go,
BUT she gets to keep her jacket as a reminder of her continued growth in this
hallowed hall of cookery.
And now, the real challenge begins... Only one
thing stands between you and the Araxi... each other. Each chef will have 50
covers, their own menus, and one final service for all the marbles.
There is a limo waiting to take Kevin and Dave to
their final reward challenge. They know that they have to be ready to cook at a
moment's notice... and their next challenge will test whether they have that
ability within them.
The chefs venture to downtown LA, where Ramsay is
waiting for them rooftop. Simple task: 45 minutes to make a dish worthy of being
at the Araxi.
Kevin: Petite Clam Bake with Poached Lobster and
Corn Pudding
Dave: Rack of Venison with Sour Cream and Chive Puree
Now judgment. Handling the duties are food critic
Alain Gayot (Gayot Publications), Jamie Maw (food critic for Vancouver
Magazine), Tanya Steel (editor-in-chief of Epicurious), Warren Geraghty
(executive chef, West in Vancouver), and Colman Andrews (executive editor for
the now-defunct Gourmet Magazine).

DAVE wins, 3-2! He wins the battle, but the war
is about to begin as Dave and Kevin take the night.
Morning breaks on the final day of Hell's
Kitchen, as both chefs are working on their final menus. Kevin's going the
classy route with Heather in the red kitchen, while Dave will work with Scott in
the blue.
But first, some special deliveries of some
special ingredients... six of them. And the biggest one... they call "Biggins."
Yes, six former contestants return to help the finalists out. Dave won the
challenge, so he gets the pick first.
DAVE: Ariel, Robert, Suzanne
KEVIN: Van, Amanda, Sabrina
They're either going to take you all the way...
or console you.
And now, prep begins. Kevin's menu has
caramelized scallop appetizers, coffee cured beef tenderloin entree and a trio
of creme brulee for dessert. It looks appetizing, but there's going to be a lot
of execution. Dave's menu is going to have a wild mushroom risotto, a roasted
loin of venison, and a dark chocolate mousse for dessert. Kevin's team strives
to get his elaborate menu, while Dave's menu is full of classic dishes that the
team picks up on easily.
But one more thing before opening... They cook
like finalists, but they don't LOOK like finalists. Bring forth the white
jackets!
Now that we're changed into the executive
threads.... "For the last time this year... open Hell's Kitchen." It's the
doubleheader for all the cheddar!
In attendance are a lot of head chefs from
Vancouver including the future employer of the winner, Chef James Walt of the
Araxi. Let's show everyone what we've got.
Kevin starts by getting underdone scallops from
Amanda. Dave relies on Robert's app skills. "You are my ace in the hole."
Appetizers are flying out of the kitchen, while Kevin's kitchen is at a
standstill. He needs to make a change if something is not working. He switches
Amanda with Van. The decision has paid off, and the first apps are leaving
Kevin's kitchen. Dave's kitchen is almost ready to move to entrees. But Robert's
apps are suddenly not up to snuff. "Oh you done crossed the line, my friend, so
now, I must (^_^) with you. And I love stirring up the (^_^)." Even so, the
diners on Dave's side are satisfied. The diners on Kevin's side... not so much.
Van has to come to Kevin's rescue.
Dave is starting to push entrees... but the
venison is starting to push back. Second try... not bad. Food once again leaves
the kitchen. Diners are enjoying entrees all over. Every good review counts...
some more than others, as Kevin gets an order from the Araxi chef. And Amanda's
screwing it. Kevin just wants... something. He gets... FIRE. Damn it, Amanda.
Kevin catches himself and rallies the troops. Amanda's filet is making it out to
an important diner.
At 1 hour 45 minutes in, Dave's got four tables
left, Kevin has six. Dave's starting to slip. Ariel's salmon needs help. It's
neck and neck now. Time to push to the finish line.
And... Service ends in a dead heat. For the last
time in Hell's Kitchen this season, time to clear it down and switch it off.
Now all they can do is wait and ponder their
fate. Tonight's winner will be determined by both comment cards AND Ramsay's
overall observations.
Ramsay says that this is the closest final in
Hell's Kitchen history... He could not be prouder of both of them. But he has a
decision.
You're familiar with the doors...
This is for Araxi...
One...
Two...
...
...
THREE!
And it's DAVE "THE ONE-ARMED BANDIT" LEVEY, your
season six Hell's Kitchen champion! He will serve the world in British Columbia!
"Dave has a very natural ability and a very
sophisticated palate. He fought through excruciating pain and excelled and went
on to win Hell's Kitchen. He's gonna be an amazing asset to the Araxi Restaurant
and Bar in Whistler and I'd like to wish him the best of luck, but honestly, I
don't think he'll need it."
And as soon as we put his picture on the HK Wall
of Honor and toast our champion, we get the party started... with some of the
footage that you DIDN'T get to see.
