Last week, we revisited our childhoods in
search for the perfect grilled cheese and tomato, resulting in a double
elimination, with fighters Christine and Derrick leaving the
MasterKitchen. Tonight, the other six will follow them, BUT... it'll be
to this week's Team Challenge at... LA's Patina at the Walt Disney
Concert Hall.
TEAM CHALLENGE #6: Restaurant Takeover
The teams will be manning the kitchen at
this famed restaurant.
TEAM TRACY (blue): Adrien, Jennifer
TEAM SUZY (red): Ben, Christian
Both teams will prepare, plate, and serve
two of Patina's appetizers and two entrees... TO MATCH the standard
worthy of the Michelin star given the eatery. Welcome to Hell Day.
Helping to demonstrate the dishes are
Executive Chef Tony Esnault and his staff. They will replicate...
- Hamachi Crudo
- Lily Risotto
- Scallops
- Beef Two Ways
Suzy is calm to take charge of the Reds
with Christian on risotto. Tracy is also under control with the risotto,
while her team take care of the hamachi. Needless to say, all the cooks
are a little more than nervous. Each team will serve 25 of the
restaurant's regulars. And if that wasn't enough, Gordon has decided to
go into the trenches and oversee the dinners himself.
"Welcome to the F Word. It's dinner
time."
Basically.
The Blues are ready to go. The Reds...
are nowhere to be found. That's on Suzy, and they're back in front of a
stove. The orders mount up and so does the tension. The Blues have a
hard time keeping up, and the Reds... have a hard time cooking. Well,
Ben is. Ben feels better with hamachi, so over he goes. the BLues enjoy
their appetizer, while the Reds are getting frustrated and fragmented.
Communication, people.
The Blues on the other hand are flowing
smoothly, getting a groove, feeling at home. Until Adrien's hair ends up
on the food. The Reds get back in the game.
Two hours into service, and both teams
are hitting a stride, but the customers are giving mixed reviews.
Now comes the order for the OWNER and the
EXECUTIVE CHEF. They will help judge how the cooks interpret their
dishes. Combine that with the judges' assessment on how they run the
show...
And now the decision.... Back in the
MasterKitchen. The next day.
And the winners... THE RED TEAM! Which
means the Blues will take on...
PRESSURE TEST #6: Salmon
Each cook must scale, fillet, and de-bone
up to 10 portions, cooking one of them PERFECTLY. Gordon... will
demonstrate. Protip: Let the knife do the work.
Forty-five minutes... one perfect salmon.
- Jennifer Behm: a little scale... and a
little rare.
- Adrien Nieto: scoring's deep into the flesh... portions uneven... and
over.
- Tracy Kontos: no tail pieces... uneven proportion... and under.
Gordon wants to see the carcass. He wants
minimal waste. After the most difficult Pressure Test in this
competition...
... JENNIFER.... is safe.
... TRACY... is going home. BUT not
without a parting gift of cooking classes at Le Cordon Bleu and an offer
to work at any of the three judges' restaurants.
Now... FIVE remain to chase the dream and
the title. But tomorrow, we're putting the "F" back in food... if you
know what I mean. And I think you do.
