5 Chefs Compete Part 2

Five chefs... one of them the alpha male among four hens. All of them are now clad in black, but they are not the only ones, as they prepare for their toughest Dinner Service yet.

If you remember, Ramsay has called for five of the best chefs he has ever worked with. He should know, because all five have WON Hell's Kitchen. They are...

- Chef Rock Harper (season 3). Rock's still with the charity organization he help started in DC and was on one of the recent Food Network shows, "Chef Wanted with Anne Burrell."
- Chef Christina Machamer (season 4). Christina's still a marketing manager in Napa Valley. While at her winning position at Gordon Ramsay at London West Hollywood, she earned her FIRST Michelin Star.
- Chef Dave "The One-Armed Bandit" Levey (season 6): Dave started working again. He's the executive chef of the Publick House in Chester, NJ.
- Chef Nona Shively (season 8). Nona is still at LA Market, working as a chef de cuisine under Chef Kerry Simon.
- Chef Paul "Big Deal" Niedermann (season 9): Paul now works in LA instead of NYC, at BLT Steak LA.

The Final Five think they have what it takes to beat our dream team. Can't wait for this one. Both teams must add an appetizer and an entree to the HK menu. Back to the dorms.

Susan takes the lead for the final five, while Dave does the same for the dream team. And it seems like Nona is going against her team on every decision made. Chicken & waffles? Really?

Both teams like duck. Mary wants to do it two ways, though Susan isn't that confident. The team thinks it's delicious. The Champions... veal and collards for the entree. Nona REALLY wants to do it hood, don't she?

Next, kitchen assignments. Susan wants to be on meat. Cyndi wants her to be on float. Mary's on garnish, Jon's on fish, and Susan's on the attack.

The next day begins with prep on both ends of the kitchen as it has all the action and fury of a title fight. The Champions have all carved out careers from this show, but can they rock the House that Ramsay Built AGAIN? We'll find out soon, but first, they must plate up samples for tasting. Meanwhile, Mary is having a little too much fun with her duck. Hey, she is a butcher, after all.

And Susan is grumpy. Susan needs a hug.

In the Returning Champion's kitchen, there's no real stress, as no one is getting eliminated. This is strictly their flavors against those of the final five.

Back in the FF kitchen, the duck confit is DOA seemingly. But let's see what the teams DO have.

FF:
- Steak Tartare with Quail Eggs - needs more heat.
- Duck Breast with Celery Root Puree, duck confit missing. - Ramsay's pissed. Duck isn't even cooked properly

RC:
- Rendered Duck Breast with Pistachio
- Veal Loin with Collard Greens - Remember, they don't like it too pink.

Be afraid. Be very afraid.

Second try at the entree on the FF side... Nice flavor. Now it's on like Donkey Kong.

"Jean Philippe... Open Hell's Kitchen, please!"

DINNER SERVICE #15: Final Five vs. Returning Champions

Jon wants to work on his own. Ramsay wants Mary working with him. Ramsay... knows what he's talking about. They're off to a flying start on apps. On the Champs side... Nona... needs to make the risotto richer. That works. Dave pinch-hits. Nona's forgetting that they're competing with the FF, not each other. Apps are all over the place, and now it's time to bump it up ONE! MORE! NOTCH!

Mary takes the lead on a six-top of tartare. And... well, everything else. Susan and Ja'Nel's apps... on slightly different pages... still get pushed out. On the Champions side... Rock... is silent until there's a fire. What. Is he. Doing? Everyone's cooking, what's he doing? He's losing his crap is what he's doing. Appetizers...are done. Let's go to the mains. Paul and Christina are driving.

On the FF kitchen, Susan's taking four minutes to cook two minute capellini. Jon's scallops are ready and walking. Susan... still working on pasta. Took a while, but it's perfect. NOW they're onto entrees. Cyndi and Jon driving.

Champions... pushing entrees. Paul's lamb is a little under. Two more minutes oughta fix that. Or not. A lamb plate comes back too rare. On the Black team kitchen... Duck and bass go out perfectly, and Mary has crazy eyes. Meanwhile, lamb refire is out. and the Champions are kicking it into high gear.

LAST TICKET BOTH SIDES! Wellies on the FF side are under. Damn. Cyndi hopes to get temps perfect, while the Champs are hot on their heels. Dave's hot on Christina. Christina... not so much.

FF last ticket... two lamb, two Wellington... the best he's ever seen. Ramsay's words, folks. That is a win for the Final Five.... OR IS IT? The lamb is coming back. That was rare, it needs to be medium. The refire... is still bloody. The Champs are still in play. And... DONE. All that remains is the red lamb refire... and their lamb is delivered.

Clear down, kids. You did good. Now let's see what the comment cards say.

The Champions... 95% of their guests would be happy to return. The Final Five... 93 percent. WOW. CLOSE. Champions prove why they are champions. The Final Five ... humbled a little, but the game continues. It's time to nominate two chefs for elimination. And it's going to get ugly, and in the case of tonight, bittersweet.

Already, Jon is targeting Susan for the pasta fracas. Mary targets Cyndi on the back of raw lamb. Cyndi targets Ja'Nel on not running her stations.

ELIMINATION #14

Ja'Nel nominates Susan (timing on the capellini) and Cyndi (raw lamb). Cyndi thinks Susan and Mary. Susan thinks... Cyndi and Mary.

Ramsay accepts the initial nominations.

Susan says she has the passion to go. Cyndi says that she's not ready to give up the black jacket, saying that she's a better well-rounded chef.

This is perhaps Ramsay's hardest decision. Both had bumps, and both had high points.

Susan... and Cyndi... KEEP their jackets on the back of today's stellar service. NO ONE leaves tonight, but it's going to get harder from here on out. And there will be NO FURTHER SECOND CHANCES.
