Two Chefs Compete
August 10
This season's class on Hell's Kitchen was the
most ambitious yet, and Chef Ramsay wanted them to be even MORE ambitious. But
when the fire went out, only the top two remained: Jay Santos, an executive chef
from Boston, and Holli Ugalde, a banquet cook from California. Over the season,
they struck up a bit of a relationship, but in the end with a job at the Savoy
Grill in London on the line, these friends with benefits are going to turn into
bitter rivals.
The next morning, Jay & Scott and Holli & Andi
finalize their menus. Jay has a lot of bold flavors on his mind, while Holli...
doesn't. Yet. But when she thinks about thinks that she loves, it comes down to
California cuisine.
But before they can present the menus, Ramsay has
something special planned for them... at the London West Hollywood. Where a few
of his friends are waiting to watch Iron Chef go down. It's the final challenge:
one hour to cook five dishes (amuse bouche, cold app, hot app, fish, meat) to be
judged by five of Ramsay's finest executive chefs.
AMUSE-BOUCHE; Judging is James Durrant (Maze).
Holli: Virgin Bloody Mary
Jay: Ice-Cold Tomato Water
Winner... JAY (Jay leads, 1-0)
COLD APP; Judging: Diego Cardoso (Murano).
Holli: Caviar with Frisee
Jay: Grilled Lamb Loin with Greek Salad
Winner... HOLLI (Tie)
HOT APP; Judging is Clare Smith (Gordon Ramsay's
flagship).
Holli: Foie Gras
Jay: Bacon Wrapped Scallops
Winner... HOLLI (Holli leads, 2-1)
FISH; Judging is Steve Allen (Gordon Ramsay at
Claridge's)
Holli: Five-Spiced Tuna
Jay: Arctic Char
Winner... JAY (TIE!)
MEAT; judging is Stuart Gillies (Savoy Grill)
Holli: Wagyu Filet with Broccoli Rabe
Jay: Grilled Kobe New York Strip with Grown-Up Tater Tots
And the winner is.... JAY! For winning this
challenge, he gets first pick in the final Dinner Service. Amongst six of the
worst chefs this year...
JAY: Benjamin, Jason, Fran
HOLLI: Autumn, Nilka, Siobhan
They get some time tonight to go through the
menus. Which sucks for Jay, because he was hoping to sleep with Holli tonight.
Waa waaaaa.
Welcome to the final day in Hell. The kitchen is
in half; the dining room is in half. Meanwhile, Siobhan is doing her best to
sink the victory ship, while Ben truly wants to help Jay to win... we hope he
doesn't take on too much.
And Jay and Holli are called to Ramsay's office.
For what, we don't know. Until Ramsay drops a gift on their head... the coveted
white jackets and a food-and-wine vacation in AUSTRALIA!
Last time, season 7, good Lord willing and the
creek don't rise, OPEN HELL'S KITCHEN!!!
DINNER SERVICE
We are fully booked tonight, as Ramsay will pay
close attention to both kitchens. Jay's team gets off to a strong start on their
first ticket, while Holli's looking to do the same. Unfortunately, Siobhan's on
the amuse station. In Jay's side, Fran has a problem with the scallops. She
didn't really have a clue as to what's going on. Neither did Siobhan. Autumn is
going to help out with that. Fran is fighting her way back, and the customers
are getting perfect dishes every time. Apps slowly come out of Holli's kitchen,
while Jay's kitchen is still on a roll. Jay sends an incomplete table as Jason
crumbles with raw lamb.
An hour into service, Jay's kitchen has
stopped... until Jason finally gets the lamb right. Needless to say, it was
worth the wait. Holli's team has picked up the pace. She moves onto entrees.
Jay... tries to get Jason back on his game... by coddling him. That was just
painful. Ben had to step up and play sous-chef, getting the food out tout suite.
Autumn, meanwhile, is dragging a table on the red side.
Both chefs have three tickets left... Now it's a
race. Not as amazing as the one on CBS, but whatever. And Jay... finishes first.
And gets props from his mom. Holli gets props from her son and his father.
Back up to the office. Back up to the door. For
the winner... the title of head chef at the Savoy Grill and the title of winner
of Hell's Kitchen season 7.

...
...
HOLLI UGALDE! And here comes your kid... and the
picture on the Wall of Fame... and CONFETTI, of course.
Cheers to the champion of Hell's Kitchen, and as
we start cleaning up for season 8 in the fall, here's a final word from Chef
Ramsay...
"Holli won because she's grown as a chef more
than any other chef in Hell's Kitchen. At the start, she was barely noticeable.
But then, she got her confidence. She emerged, and there was no holding her
back. I'm absolutely thrilled she'll be working for me at the Savoy Grill in
London.
