June 19
Yesterday, the cooks were charged with
cooking for 201 starving Marines. From there, we went to the most
American of desserts, the apple pie. But Michael's was a bit too cheesy.
So now 15 cooks remain. In an hour, that'll be 14 AT MOST.

Inside the Mystery Box today... OFFAL!
Yes, the bits of animals that you don't usually eat will be eaten today!
Balls, brains, tongues, and a lamb's head to boot. That's good eating,
believe it or not.
You have 90 minutes to make something
incredible out of this inedible. And for this round only, you will have
access to a limited pantry.
The final three...
- Becky Reams: Sweetbread Duo with
Chicken Liver Pate on Buttered Toast
- Ryan Umane: Sweetbreaks with Potato in Shallot Curry Oil
- Christine Ha: Panko Fried Sweetbreads with Bok Choy
And the winner of this Mystery Box, and
the person who will get a huge advantage in the next test...

INNOVATION TEST #2: Fresh vs. Convenience
The theme for this elimination Innovation
Test... Fresh versus convenient. Graham offers... ahi tuna. Gordon
has... ham. Joe rounds out the panel with... crabs.
Not only will Ryan get to choose the
ingredient... and not only will Ryan sit this challenge out in prep for
the next one... BUT Ryan will choose who gets fresh and who gets canned.
Ryan chooses... the crab. So we divvy it
up like this...
FRESH: Christine, David, Tanya, Scott,
Tali, Mike, Helene
CANNED: Becky, Felix, Frank, Anna, Monti, Stacey, Josh
You have 60 minutes to create a stunning
crab dish.
And Monti pretty much says what I'm
thinking at the moment: "Who the (^_^) gives a live crab to the blind
chick?" And we have the first casualty, as... yes, Christine gets a
pinch. That's a clown move, Ryan.
Meanwhile, Frank is sticking to what he
knows best: pasta. Tali, Ryan's compadre, gets a live one and works with
it. Mike... is relaxed. Related. Released. Helene's making a crab soup.
After hands up...
- Tali Clavijo: Paprika Buttered Crab
with Saffron & Watercress Sauce. He took the backfin meat of a $60 crab
and made a sauce out of it... and that wasn't even the dumbest move he
could make!
- Josh Marks: Thai Crab Trio with Crab Cake and Salad.
Liiiiiiiiiiiiiiiiiiiittle too spicy, but good.
- Mike Hill: Crab Bisque. Overprocessed.
- Tanya Noble: Thai Green Curry with Rice. Very well balanced.
- Frank Mirando: Orecchiette Puttanesca. Not very well balanced. It's
hamburger helper.
- Christine Ha: Ceviche Cocktail. Fresh and fragrant. Ryan effed that
one up big time.
Ryan takes a taste of humility... and
calls it really awesome. Would you like some crow with that?
- Helene Leeds: Dungeness Crab Soup. She
makes her $60 crab tastes exactly like the canned stuff.
- Monti Carlo: Scotch Egg with a Crab Shell, and Monti's a freak,
because she makes it work.
So those who had the fresh crab screwed
it. And those who had the canned crab made it into something elegant.
The two dishes that were spectacular...
Josh's Thai Crab and the winner of this challenge... Christine's Ceviche
Cocktail. They will both be team captains with the next challenge.
That leaves the bottom .... FOUR. Frank,
Tali, Mike, and Helene. Frank and Mike... are SAFE.
Tali and Helene are BACK in the bottom.
Leaving the MasterKitchen tonight.... HELENE. She had nothing left to
offer. Except this... Frankie's going to win.
