Steaks in Vegas

Things were a bit corny AND crabby in the
MasterKitchen last week, as the corn flew in the Elimination Test. A few
went savory, a few went sweet. Justin went home. Tonight, the action is
on the cooks as we take a trip... to VEGAS!
Our Team Field Challenge takes us to Drai's Beach Club on the Cromwell
Hotel on Strip. Well, almost all of us. Dan had to exit from the
competition for an unnamed matter. But he is okay and he's heading back
to Chicago.
ROUND 2 TEAM
CHALLENGE: Vegas Dinner
- Cook & serve for 101 Las Vegas entertainers
- 60 minutes to prep & cook, 60 to serve.
Stephen & Shelly had the best dishes in the Elimination Test, so they
will be Team Captains. Stephen had the best dish, so he will have a key
advantage. He can either pick his team or pick his protein - live
lobster or chicken tenders. He picks... the team. Shelly picks the
protein: chicken
RED TEAM (Stephen; lobster): Amanda, Charlie, Jesse, Sara, Olivia,
Tommy, Kerry, Nick
BLUE TEAM (Shelly; chicken): Hetal, Derrick, Claudia, Veronica, Katrina,
Christopher, Ailsa
The Blue Team is looking for a saffron "remoulade".... sorry, a
roulade... with mango. Are they going to make their deadline? The Reds
are going with a Lobster Herb Salad with Smashed Potatoes. But can he
make over 100 portions of perfect lobster?
Twenty minutes to go, and the entertainers - from Rio Chippendales to
Jubilee showgirls and everyone in between - are starting to arrive. And
they're all scheduled to perform this evening. So you have to get your
dishes down and in time.
RED: Lobster with Roasted Vegetables & Smashed Yukon Potatoes
BLUE: ... God only knows at this point. Supposedly, it's Chicken Roulade
with Saffron Butter Sauce & Roasted Potatoes
At the plating station, Tommy is in over his head. His portions are
oversized & sloppy. Time to get him off of that station. Meanwhile,
under Derrick's leadership, the blue plates are finally leaving the
kitchen. And remember when we said that Tommy couldn't possibly mess up
potatoes? Well... he messes up potatoes. And Stephen sends him to the
benches.
The Reds finish their dishes with six minutes to spare, six minutes to
serve 24 blue dishes. Ultimately, they were eight plates short. That's
eight votes for the Red Team.
WINNERS: by a vote of 52-49... RED TEAM! Those 8 dishes were the
difference.
FOUR members of the Blues will face the Pressure Test. Shelly as captain
can save three people.
The next day, the Blues head to Gordon Ramsay Steak at the Paris Las
Vegas.
PRESSURE TEST: Steak
Judging each of the steaks... the Big Boss. Saved from the challenge:
Hetal, Veronica, and Katrina. The three cooks on the team with NOTHING
TO SHOW for yesterday's challenge.
The first part of the test: you will have to cook steak to the
temperature Gordon demands. Then the final two will have to do it all
over again with a different cut and a different temperature.
First: New York Strip, medium rare, 20 minutes. The two closest will be
safe. The secret: the sear. There's a big line of fatr that has to be
rendered first to tenderize the steak. And it has to be pink in the
middle.
WINNERS: Derrick & Claudia
Second: Filet Mignon, rare, 15 minutes. The most delicious steak lives
to cook another day. Baste every 30 seconds. Roll it around, sear it
evenly. Keep it warm, but keep it rare. And don't set fire to it...
