"Our ultimate competition is with ourselves. That is what my uncle told me when I would visit him as a young boy... My uncle, the man the world knows as Kaga the Chairman, has decided that although America is a young country, we now possess the proper palate to host our own Iron Chef competition, an American celebration of the world's high art of cuisine."

Cora vs. Schneider: Battle Lamb
April 10

The Challenger: Chef David Schneider, a man who spent many summers with his grandparents in Greece, developing a love of Regional Greek cuisine. Working his way up the Chicago food scene, he now is the chef and owner of Taxim, recently named one of the city's best new restaurants by the Chicago Tribune. Today, it's a Greek on Greek affair as Schneider challenges the Iron Maiden of Kitchen Stadium, Iron Chef Cat Cora.

Prepare for battle.

The Crib Sheet:
CORA
Matt Hudak & Demetria Foundoukis, sous-chefs
VS SCHNEIDER
Jenna Yeh & Joey Schwab, sous-chefs
Greek/Aegean COOKING STYLE Modern Greek

The Theme Ingredient: Leg of lamb, six months old.

The Rules: Each chef must create a five-course meal, with each course utilizing the theme ingredient, within 60 minutes. The judges will score the dishes on a 20-point scale: 10 points taste, 5 points plating and presentation, 5 points creativity and use of ingredient. The chef that best articulates the theme ingredient through their dishes wins.

The battle clock is set at 60 minutes, which will start when the Chairman, with full heart and empty stomach, utters the words of his dear uncle.... "Allez cuisine!"

And Battle Lamb is ON! Lamb is sheep that are less than 18 months old. Today, the chefs will work purely with the hind quarters. A lot of time will be spent breaking the ingredient down.

Tonight's Judges
- Michelin-starred chef Michael Psilakis
- PR specialist Karine Bakhoum (KB Network News)
- Purveyor of organic meats Josh Applestone

"Five seconds... three... two... one... " And Battle Lamb is history. Put it down and walk away.

TASTING & JUDGMENT

Schneider: "I felt we should start with a little Greek tradition and move on to street food like the kebab, and then we came back to the Greek with the lamb shank."

- Lamb Mezze Spread
- Minced Lamb Phyllo Pie
- Grilled Lamb & Cherry Skewer
- Lamb & Spinach Roulade
- Lamb Osso Buco

Cora: "I always like to push myself and challenge myself in Kitchen Stadium to showcase the different flavors of the world."

- Lamb Tartare
- Lamb Duo (marrow with crostini and Szechuan lamb)
- Spicy Merguez Udon
- Lamb Tagine
- Spiced Lamb Roulade

Both are seasoned Greek chefs, but while one stayed the course of his training, the other went around the world challenging herself to something out of her zone. Did it end up costing her? Whose cuisine reigns supreme?

IRON CHEF CHALLENGER
Taste 27 24
Plating 13 12
Originality 15 10

... 55-46 in favor of Iron Chef Cat Cora. The borderless approach that is the foundation, the very heart of the series, is on full display and gives Cat Cora another notch on her chef's knife.

Until next battle, we bid you good eating.
