The Challenger:
Chef David Schneider, a man who spent many summers with
his grandparents in Greece, developing a love of
Regional Greek cuisine. Working his way up the Chicago
food scene, he now is the chef and owner of Taxim,
recently named one of the city's best new restaurants by
the Chicago Tribune. Today, it's a Greek on Greek affair
as Schneider challenges the Iron Maiden of Kitchen
Stadium, Iron Chef Cat Cora.

The Theme Ingredient: Leg of lamb,
six months old.
The Rules: Each chef must create a
five-course meal, with each course utilizing the theme ingredient,
within 60 minutes. The judges will score the dishes on a
20-point scale: 10 points taste, 5 points plating and
presentation, 5 points creativity and use of ingredient.
The chef that best articulates the theme ingredient
through their dishes wins.
The battle clock is set at 60 minutes, which will start
when the Chairman, with full heart and empty stomach,
utters the words of his dear uncle.... "Allez cuisine!"
And Battle Lamb is ON! Lamb is sheep that
are less than 18 months old. Today, the chefs will work purely with the
hind quarters. A lot of time will be spent breaking the ingredient down.

"I felt we should start with a little Greek tradition and move on to street food
like the kebab, and then we came back to the Greek with the lamb shank."

Both are seasoned Greek chefs, but while
one stayed the course of his training, the other went around the world
challenging herself to something out of her zone. Did it end up costing
her? Whose cuisine reigns supreme?
