Symon vs. Hearst: Battle Mozzarella
March 6

The Challenger: Chef Emma Hearst, the youngest challenger in Kitchen Stadium history at 24 years, one month. She is a graduate of the Culinary Institute of America and currently runs the house at Sorella in her native Manhattan. She wants to let the ingredients speak for themselves. They had better, because the man she draws, Iron Chef Michael Symon, is very fluent in cuisine.

Prepare for battle.

The Crib Sheet:

The Theme Ingredient: Several varieties of Mozzarella cheese, including curds, fresh, and smoked.

The Rules: Each chef must create a five-course meal, with each course utilizing the theme ingredient, within 60 minutes. The judges will score the dishes on a 20-point scale: 10 points taste, 5 points plating and presentation, 5 points creativity and use of ingredient. The chef that best articulates the theme ingredient through their dishes wins.

The battle clock is set at 60 minutes, which will start when the Chairman, with full heart and empty stomach, utters the words of his dear uncle.... "Allez cuisine!"

And Battle Mozzarella is ON! The one thing we do not feature at the altar are the shreds that we would called MAH-zarella, because this is the real deal. Pulled by hand out of the curds of buffalo milk, cooked. The word "mozzarella" comes from the Italian "mozzare", meaning to pull or to cut away.

TASTING & JUDGMENT

Hearst: "Our approach is to keep it as simple as possible, because we just want to make the ingredients dance around the mozzarella."

Symon: "Mozzarella is such a delicate ingredient, so you really want to showcase it, all the different ways it could be used. I wanted to take you on a little tour of Italy, things that I've seen when I was in those parts. And then a little bit of interpretation of those parts."

- Spaghetti with Uni Vinaigrette
- Fig, Pancetta & Smoked Mozzarella Gratin
- Elvis Sandwich with Mozzarella

So youth vs. age, Northern vs. Southern, and the home team vs. the visitor. It's taste that counts. Whose cuisine reigns supreme?
