Elise may be good on the line, but her
attitude - and her hit list - stink. For the last two nights, she's been
dragging the team on a downward spiral. Still, Chino couldn't cook to
save his life, and he was shown the door, leaving the lucky 13.
Meanwhile, Hurricane Elise continues to storm through the dorms... and
it looks like landfall may yet occur during dinner.
The next day... it's time for chemistry
class. Nah, it's actually a refresher course in...
CHALLENGE #5: Molecular Gastronomy... Old
School Style (back to basics: fire, water, and protein)
Joining Ramsay in the kitchen... Chefs Homaro Cantu and Ben Roche of
Moto in Chicago, the leading restaurant when you're both a techie and a
foodie. As an example... sound waves + orange + LNO = ... A Dreamsicle
Sorbet.
The chefs are going to use fire and water
to cook six different proteins. They have 45 minutes to boil, poach, or
steam their way to the most points. Because the women have seven, they
will cook two prawn dishes and drop one (they end up dropping Carrie's).
FILET MIGNON
JONATHON: "Meat, potatoes, and vegetables"
JENNIFER: Boiled Filet in a Basil Ponzu Sauce
WINNER: Jennifer (Red up, 1-0)
PRAWNS
MONTERRAY: Prawns Eggs Benedict
ELIZABETH: Spaghetti with Prawns
CARRIE: Prawns in a Beurre Blanc Sauce
WINNER: ... None.
SALMON
JAMIE: Poached Salmon with a Citrus Jasmine Sauce
WILL: Double Boiled Egg on Salmon
WINNER: Blue (Tied at 1)
GUINEA HENS
GINA: Poached Hen with Mushrooms
TOMMY: Poached Leg with Breast - "I don't usually think about things. I
just do them." CLEARLY.
WINNER: Gina (Red up, 2-1)
LOBSTER
ELISE: ... in a Beurre Monte Sauce
PAUL: ... Citrus Poached
WINNER: Paul (Tied at 2)
VEAL
NATALIE: Veal Terrine in Greens
KRUPA: Poached Veal in Broth. ONE BIG ISSUE, though. THAT... is NOT
veal. That's filet mignon.
WINNER: ... Nobody.
Red Team had two mistakes... The best
dish sat on the side, and the veal... was also to the side. WINNER,
BLUE!
Both teams will be getting wet. The Blues
are going to a spa in Beverly Hills. The Reds are going to be scrubbing
HK's fountain and prepping both kitchens for dinner TONIGHT.
How does an experienced chef not know the
difference between veal and beef?
At the spa, we see Natalie's tramp stamp
and Tommy's... everywhere-else stamp. Ye. Gods.
From the spa, we go right into....
"James, open Hell's Kitchen please!"
DINNER SERVICE #5
In addition to the menu, the chef has offered a tableside service of
halibut sashimi, with Jennifer on the Reds and Natalie on the Blues
handling.
Paul organizes the Blues to a good start.
Krupa's still on the whole meat mix-up from earlier. Will it cost her
her risotto? "The risotto is like soup." Yep. Second time is perfect.
She finds her groove, while Jennifer is sweating it out in the dining
room... Literally.
The Blues complete their appetizers and
are relying on Jonathon, Tommy, and Monterray to keep the momentum going
into the entrees. Krupa and Gina will have to work together to catch up
on the appetizers. Gina's in a bit of a rush with the pasta, which slows
Krupa down. No communication. And no surprise, the pasta's undercooked.
Entrees are flying out of the Blue Side, but Monterray's raw wellies may
halt that. Krupa is finally ready for more spaghetti... and Ramsay's
ready to send Krupa back upstairs... which is precisely what happens.
One hour into service, the Reds finally
pull it together, and the customers are happy. Monterray and Tommy hope
to do the same with meat and fish. Tommy doesn't talk... or remember
things. Meanwhile, the Blue diners are starting to become belligerent.
The Reds are on entrees now... and they may be off them soon enough. No
one is talking with anyone, Gina chiefly. Over in the Blue Kitchen,
Monterray's sinking the ship... and he's taking Tommy with him upstairs.
Nearly two hours into service, will Gina
and Elise finally start talking to each other? Guess not. They only
communicate in levels suited for alley cats fighting. And now... REDS'
night is done (except for Jennifer, Carrie, Elizabeth & Jamie). Ramsay's
had it. Elise... she's just getting started.
Meanwhile, back in the kitchen, the rest
of the crew is finishing up dinner. But Ramsay still isn't seeing a
leader anywhere, so he charges both teams to come up with a consensus of
two people each who'll do the team justice... by LEAVING.
Making it short and sweet on the Blue
Side, Tomboy and Monty. The Reds... a little more complicated. Elise
would vote for Krupa and Gina, Jennifer would vote for Gina, and
Elise... is ready to go out swinging.
ELIMINATION #5
But first, the Blues nominate Monterray (meat blunders) and Tommy (lacks
communication). The Reds nominate Krupa (returning appetizer) and Elise (communication
issues).
Elise says she has a lot to give, saying
that Gina is the weakest. Krupa had a bad day, saying that Gina is the
weakest. Tommy needed to be vocal. Monterray says he pushes hard for his
team.
Elise... "I agree with you. GINA, take
your jacket off."
So another night and another service
where Elise is going to have the last word... unless Ramsay - who still
has yet to give up on his brigade - does.
"They say good things come in small packages. Unfortunately in
Gina's case, her talent matched her size... Tiny."
