Last time, four celebrity superchefs got
totally lost in prepping dinner for a cadre of writers and producers of
"Lost". In the end, Suzanne Tracht won $10,000 for her charity and a
spot in the Champions Round, joining Hubert Keller. Now another four
chefs will try for spot #3.

Quickfire Challenge: This one has a lot
of color involved. From season 2, you're going to create a dish based on
the color that is drawn from a knife block. You have 30 minutes to do
so.
Wilo: Orange
Cindy: Yellow
Ludo: Red
Rick: Green
Tasting the dishes are... three food
stylists, Chris Oliver, Joann Cianciulli, and Christina Peters.
And after the 30 minutes, let's see what
we come with... Ludo? "Merde. I forgot to put the tomato." You
can't say "merde" on television!
LUDO: Steak Tartare with Watermelon, Red
Onions & Red Beet Gazpacho. The chef wanted you to pour on the sauce
before trying. It doesn't make the dish any more appetizing.
CINDY: Yellow Vegetable Curry over Sweet Corn Grits & Fried Corn
Tortillas. They didn't spit it out so it has to be a little good, she
reckons.
RICK: Roasted Vegetables, Mole Verde with Tomatillos, Green Chilies &
Pumpkin Seeds. It's "complex"
WILO: Smoked Salmon Tartare with Coconut Milk & Tomato Paste Sauce. The
flavor is really good, but he forgot to remove the ring mold.
Quickfire scores are...
Ludo: 3 stars
Cindy: 3.5 stars
Rick: 4 stars
Wilo: 4.5 stars
So Wilo has the advantage going into...
ELIMINATION CHALLENGE
Offal is the part of a critter that no
one really likes to eat. Hearts. Brains. Kidneys. Et cetera. But you'll
be using all of that in creating a street food dish to serve at
Universal Studios Hollywood.
Wilo will be working with... beef hearts.
Rick has... tongue. He loves it. Cindy has... tripe. And Ludo draws...
pig's ears.
You'll have a budget of $300 and 45
minutes to spend at Whole Foods, access to the pantry, and a total of
four hours of prepping, three in the TCM kitchen and one on location.
Ludo is thinking quesadilla, so he goes
to Rick for advice. He thinks... "bad choice, bad choice." Wilo says
that street food should be simple, one piece. They decides to take on a
Puerto Rican sandwich. Cindy, who started "Girls Who Eat Guts", will
make some menudo. She's never cooked offal on the fly, so she's going to
use a pressure cooker and hope for the best. Rick, on the other hand,
has worked with such things and offers assistance. In the end, Ludo is
livid that he finds out that Rick is doing a taco.
Ludo's key to success is the broth.
Wilo's key to success... keeping it small... thin. Rick feels better
than he did during the Quickfire.
And once again, Ludo is freaking out. The
Mad Frenchman is lagging behind and doesn't really want help from
anyone.
The next day, we head to Universal
Studios Hollywood. They have one hour to prep there before they have to
sell their wares. And when time is called... Ludo has one quesadilla
cooked. Meanwhile, Rick has nothing to do but slip a few people some
tongue.
Judging today's street fair are James
Oseland, Jay Rayner, and Gael Greene. The dishes...
Rick: Chorizo, Bacon & Tongue Tacos with
Guacamole & Pickled Onions. The judges call it melt-in-your-mouth tender
and rather powerful. They'd have a second right now.
Wilo: Beef, Ham & Chicken "Tripleta" in Pita Bread with Beef Hearts.
"Anybody for spicy?"
Ludo: Pork Quesadilla with Chorizo, Pinto Bean Puree, Lime Aioli &
Smoked Paprika. He likes to have fun and help in the kitchen.
Unfortunately, he's not having either, rushing to make product.
Cindy: Hot & Spicy Menudo with tripe. The flavor profile is complex. Jay
thinks that it's a little underseasoned while Gael thinks that it's nice
and sweep.
It's still anyone's game as we go to the
Critics Table. Ludo decided to use French technique to "not scare
people". He tried to pleased the people, and he picked a wonderful
choice. Cindy was nervous about the tripe getting cooked. The tripe
itself, though, was wonderful tasting, but the broth was underseasoned.
Was it a little too safe? Rick loved tongue, so he got the early
advantage. But could he have added a little acidic zing? Wilo thought
about the "tripleta" and the logistics behind it. They liked the flavor,
but a couple of things really would've put it over the top.
Remember, this is for $10,000 for
charity.
Ludo had 3 stars going into the
elimination round... Diners give him 3.5. Judges... 10 more for a total
of 16.5.
Cindy had 3.5 stars going into this
round. The diners give her 3 more... and the judges give her 9 more for
a total of 15.5, not enough to beat Ludo.
Rick had 4. The diners... 4. The
judges... 14.5 to give him the lead with 22.5.
Wilo had 4.5 and the lead going into the
elimination. The diners give him... 4. He needs 14.5 to win. So he has
to be flawless... The judges... 11 stars for a total of 19.5. RICK
BAYLESS is your champion tonight. He played to his strength and it
shows.
Next time, another four superstars and
another possible 25 regular stars will separate one of them from the
Champions Round. Until then... be kind and courtesy flush.
