16 Chefs Compete

Last week, it was no day at the beach, as
the teams had to trap crab and cook crabcakes to perfection. The ladies
came from behind to earn a horseback ride through Arizona, while the men
were doomed to prep for service. In a complete reversal of opening
night, the ladies pulled it out, while the men sent Cameron to his
watery demise. And then there were 16...
Another morning, another wake-up call from sous chef James.
CHALLENGE #3: Alaskan Fish
Hell has frozen over. Well, not necessarily. We have Alaskan fish cut in
half, heads in one kiddie pool full of ice and tails in another. Match
the heads to the tails, then correctly identify as trout, cod, salmon,
or halibut. First team to do that will have an advantage going into part
2.
WINNER: BLUES, four fish to two.
Now for the cooking. You must come up with one fish entree using the
fish you helped match in the first part. The men will have a five-minute
headstart.
Helping judge is the executive chef & owner of Connie & Ted's, one of
the most phenomenal seafood restaurants in America, Michael Cimarusti.
TROUT:
- Brandon: Grilled Rainbow Trout with Grapefruit Vinaigrette
- Bret: Trout Almandine
- Meghan: Chopped Trout in Tomato Coulis
- T: Mock Succotash
WINNER: BRET (Blue leads, 1-0)
SALMON
- Josh: Pan-Seared Salmon
- Michael: Bronzed Salmon
- Monique: Pan-Seared Salmon with Grilled Asparagus
- Mieka: Pan-Seared Salmon with Shredded Parsnip Hash
WINNER: MIEKA (Tied at 1)
COD
- Randy: Fish & Chips
- Nick: Pan-Roasted Cod
- Christine: Cod in Chive Beurre Blanc
- Sarah: Smoked Paprika Cod
WINNER: SARAH (Red leads, 2-1)
HALIBUT
- Michelle: Pan-Seared Halibut with Jalapenos
- Alison: Cabbage-Wrapped Halibut
- Adam: Pan-Seared Halibut with Baby Bok Choy and, as it would appear,
some of Milly's rice.
- Milly: Halibut Franchaise with Bell-Pepper Rice
WINNER: MICHELLE (Red wins, 3-1)
As a reward, the Reds are going to spend the day at Manhattan Beach,
with surfing lessons from a surfer/model. As for the Blues... it's
Seafood Delivery Day. Carry, scale, and portion the catch ahead of
tonight's service.
And the lady giving the lessons... Anastasia Ashley. Yeow. Must be a
good teacher, because Alison gets on her board the first time out.
During the punishment, Michael said that James said to take lunch...
What he didn't hear was "10 after". So James went to get Michael. So
that whole fracas about leaving the kitchen? Another round of
ITV-mandated trickery. Ya done did it to me again, Fox!
Oh, and lunch? Peanut butter & jelly... which I don't mind personally.
"I mean... peanut butter and jellyfish." YA DONE DID IT TO ME AGAIN,
FOX!
Meanwhile, something that was pointed out in the spoiler footage from
last week DID happen. Notice that Randy makes mention of the fact that
he knows knives are sharp. Pay attention. This is relevant... because he
splits his finger wide open and has to be taken in for stitches three
hours before service.
The good news is that Randy returns just in time for...
DINNER SERVICE #3
In the dining room tonight, Anastasia from earlier, college basketball
analyst Jay Williams (C-Note: come on and watch some baaaasketball), and
Samm Levine from "Inglourious Basterds". In addition to the classic
menu, Ramsay has added a flatbread appetizer and tableside snapper
entree to be served by Milly (blue) and Michelle (red).
Michael's on garnish... but Milly is doing it for him. Woops. Meanwhile,
the reds are getting the ball rolling. The first risotto... is short.
The men's apps are flying out of the kitchen... but one of them is
coming back, as a piece of plastic gets into Adam's scallop salad. Mieka
gets help from Meghan... whether she wants it or not. As a result, the
risotto is too salty. On the other side, Michael puts a hot pan on cold
service trays. That may come to burn him later... hey-oh!
Thirty minutes into dinner service, the Reds' risottos are going out,
along with T's flatbread... which is burnt. Those things will burn fast.
The men have moved onto entrees... and Nick's "perfect" pork
Wellingtons... are a little under. Because that's what you want with
your pork, a side of trichinosis. Meanwhile the Reds are kicking it into
gear... but where are the scallops from Monique? They're rubbery is
where they are! Nick is trying the pork again... and it's still raw.
One hour into service, the women are delivering their final order of
apps to the pass... and it is indeed their final order. "Can we try that
again?" Um... no.
And another plate full of undercooked pork courtesy of Nick. Coupled
with the undercooked lamb, it's enough to send THE ENTIRE TEAM back to
the dorms. NO WINNER tonight. In fact, dinner was so egregious that
Ramsay had to do something he's NEVER done before - go to the dorms
himself and tell the teams to pick two people to nominate. Each.
ELIMINATION #3
Sarah nominates Mieka (hot apps fell flat) and Christine (lack of
seasoning, overcooked pasta). Josh nominates Michael (weakest link) and
Nick (undercooked meat).
Christine thought there were communication issues and careless mistakes.
Mieka says she can become better, but she doesn't believe in herself.
Michael says that he has the skill, technique, and character. Nick says
that he is an asset, but Michael is a liability.
There was one thing that happened apart from the cooking that was
especially damning. A hot pan was placed on top of cold. In a
hypothetical situation, someone could blindly grab it from that position
and get third-degree burns. That's rookie, and Ramsay will not stand for
it, so for that, he eliminates... MICHAEL.
"Fortunately for Michael, he can go back to his job at the senior
