Gonzalez a shot at the title, as she and Marcus Samuelsson move on to
the Champions' Round. Now, six Top Chef season 1 alums will compete for
another spot.

MARK: Mussel Custard with Kaffir Lime & Figs
RICK: Cream Biscuit Berry Shortcake
GRAHAM: Crudo of Black Cod with an Edamame & Red Onion Salad.
LUDO: Roasted Pork Chop with Rosemary, Thyme & Garlic

ELIMINATION CHALLENGE
We're going to the pub. Take a
traditional pub dish and turn it into a new dining classic. Jonathan
gets his first choice...
JONATHAN: Shepherd's Pie
Rick: Fish & Chips
Wylie: Bangers & Mash
Graham: Steak & Kidney Pie
Mark: Toad in the Hole
Ludo: Irish Stew
They'll be serving up their wares at Tom
Bergin's Irish Tavern tomorrow. , and they have 45 minutes and $250 at
Whole Foods to shop.
Two hours to prep. One hour to cook.
During that hour we have cold ovens and hot tempers. Thank you, Ludo.
Mark's toad in the hole... is not yet done.
This is what we end up serving...
- Ludo's Irish Stew: Beef Tenderloin,
Potatoes Confit, Roasted Peanuts with Miso & Guinness Caramel. The
Guinness & honey glaze is on point, but at the same time... it's not
Irish Stew.
- Rick's Fish & Chips: Chicken Fried
Sable, Lemon Confit Tartar Sauce, Twice Fried Potatoes & Fennel Slaw.. A
really good piece of fried fish, but the chips are a little too hard to
eat when cooled.
- Wylie's Bangers & Mash: Bangers, Smoked
Mash, Onion Jus & Snow Peas. The jus is nice, and the dish is
recognizable.
- Graham's Steak & Kidney Pie: Roasted
Beef Tenderloin, Chanterelle Puree & Bacon-Kidney Vinaigrette. The meat
is perfectly rare, but they didn't understand the need to kill the
flavor of the kidneys.
- Mark's Toad in the Hole: Seafood
Sausage, Onion Sauce with Lobster Broth & Mustard Greens. The Yorkshire
pudding was at the bottom of the dish... and it's bready, dense, and not
cooked through. The rest of the dish is okay.
- Jonathan's Shepherd's Pie: Lamb, Mashed
Potatoes & Parmesan Cheese. The lamb is very juicy, the flavor is rich,
the potatoes are soupy.
And Rick and Ludo come to blows before...
CRITICS TABLE
Ludo really wanted to bring Irish stew to
life, but he ended up going too far off base. Mark's toad-in-the-hole
was a beautiful sausage, but the pudding was a disaster. Jonathan's
shepherd's pie is a robust dish. Wylie's bangers and mash was premade
with some merguez. Jay thought it was a little dry, though. Graham
thought that the kidneys were going to be a little hard to work with.
Rick brought citrus into the game.
