New
York on a Plate
November 27
Okay, I'm going to need four
ingredients and two chefs that completely screw them up. I have the
ingredients, now I need the chefs.... Beau MacMillan, okay, and...
Geoffrey Zakarian. That's a good one there. Now I need a loser. ...
Chef Beau! Got it. That gives us six as the superchefs head to their
next challenge...
CHAIRMAN'S CHALLENGE #5: Storytelling
Today's challenge takes us to... New York
City. The chefs are now halfway to their journey to Kitchen Stadium,
which, watashi wa kioku da tashika naraba, ("if my memory serves
me correctly"), is a good two miles from their current location, Grand
Central Terminal.
There are six postcards with famous New
York City locations. You'll have to go to those locations and tell the
story of that location with your food.
Michael won last week's Chairman's
Challenge, meaning that he has the advantage of picking LAST.
- ANNE: #4 - Central Park
- ELIZABETH: #5 - Statue of Liberty
- MARCUS: #2 - Broadway
- ALEX: #1 - Empire State Building
- GEOFFREY: #6 - Times Square
Michael can steal any location or pick
the final card. He steals Elizabeth's card...
- ELIZABETH: #3 - Brooklyn Bridge
- MICHAEL: #5 - Statue of Liberty
You will source your ingredients from the
Grand Central Market. You have $250 and 20 minutes to shop. And you are
cooking for SIX, the judges, AB, and two very special guests.
The chefs will be cooking in the kitchen
of Charlie Palmer's. You have 45 minutes to cook for SIX.
Joining the panel today are... restaurant
owner and chef Charlie Palmer himself, and the winner of last season's
NIC, Iron Chef Marc Forgione.
ANNE: Central Park - Anne's Journey to
New York
- Grilled Cornish Game Hen with Fried Chicken Livers. The dish shows off
her personality. Today may have been the day when Anne came out of her
shell. The dish was perfectly seasoned.
ALEX: Empire State Building
- Grilled Pork Chops with Roasted Potatoes. The story is of Alex's first
job as a cook and of the Empire State Building's beginnings on farmland.
Alex tries to enhance the ambience by offering the smell of "burnt
peanuts" in a bag. That shouldn't have even come NEAR the plate. The
story is great, but the dish leaves little to be desired.
GEOFFREY: Times Square: Magic,
Indulgence, Forgiveness, and Renewal at Midnight
- Eggs with Truffle & White Asparagus, Eggs with Smoked Fish & Caviar,
Smoked Salmon Tartare, and Superfood Fruit Soup. Mike thought it was
perfect and full of finesse. Marc thought it was confusing. Judy thinks
that it all works.
MICHAEL: Statue of Liberty
- Rabbit Porchetta with Cherry Agrodolce. The story and the dish are
perfectly tied together, 250 in the making and "almost as long as the
telling". Judy wanted something more architectural.
MARCUS: Broadway - Big Visions, Big
Dreams
- Hot Smoked Salmon and Crunchy Steak Salad. The story is one of common
men and humble beginnings, but the dishes themselves compete with each
other too much. The story doesn't play with the dishes.
ELIZABETH: Brooklyn Bridge
- Pork Schnitzel with Fennel & Apple. The bridge architect was a German
immigrant. The dish was eye-catching. The dish isever and well-executed,
but Elizabeth is not a good storyteller. She needs to sell it with
conviction.
Four chefs will be assured of a spot in
the next round right now.
At the top of the pack today... Anne...
and Michael. Storytelling determines that... ANNE BURRELL wins this
challenge. She'll have a considerable advantage next week. Michael will
join her in the kitchen.
In the middle, busy-dish Alex.
That leaves Geoffrey, Marcus, and for the
first time, Elizabeth. Marcus had to shoehorn two dishes into a story.
Elizabeth had to spit out a story. Geoffrey had WAY TOO MUCH going on.
But what he had going on worked, so he stays.
Which means that Chef Marcus Samuelsson
(again) and Chef Elizabeth Falkner will face off against each other in...
SECRET INGREDIENT SHOWDOWN #5
In the Food Network Kitchen, we meet this
week's secret ingredient today is... BAGELS. You will have 30 minutes to
create one dish featuring the theme ingredient. The winner will survive
to cook another day. The loser heads on the next plane back to wherever.
Or, in Marcus' case, a bus.
Judgment (Elizabeth): Bagel with the Works
She kept the bagel flavors and the dish
came together well. Judy is overwhelmed by the creativity factor.
Judgment (Marcus): Lox, Bagel & Cream
The dish is well brought together and
elegantly composed. This dish is Marcus' most focused, but the gazpacho
muddled the bagel flavor.
Another difficult decision awaits. Marcus
had better technique, but Elizabeth was slightly more creative. Which
will carry the day?
Another case of one great chef being
out-cooked by another.
Chef Marcus Samuelsson... didn't embrace
the bagel as Elizabeth did... so he will NOT be the next Iron Chef.
And then... there were five. Three women. Two
men. Only one winner.
