Moo-Vers and Bakers

Last week, we turned the humble peanut
butter & jelly into haute cuisine... and yet Sara couldn't cut it with
either. Tonight, though, it's cows, cows, and more cows for the top 10
in the Field Challenge.
We meet our team down on a dude ranch 70 miles north of the MasterChef
kitchen. The "steaks" have never been higher.
TEAM CHALLENGE: Steak
- Feed 101 cowboys steak dishes with two sides & one sauce
- 60 minutes to prep
We're doing a reverse schoolyard pick.
RED TEAM (Hetal): Shelly, Olivia, Christopher,
Stephen
BLUE TEAM (Katrina): Claudia, Tommy, Nick, Derek
So the vegetarian and the pescatarian are on the same team. Let that
sink in, meanwhile, we have a New York strip and a hanger steak. Hetal
will choose which cut she wants to use. Hetal chooses .... the HANGER
STEAK. Katrina has the meat eaters, the familiar cut, and the
experience. I think we may have a foregone conclusion here.
RED TEAM: Hanger Steak with Chimichurri Sauce
with Warmed Potato Salad & Grilled Vegetables
BLUE TEAM: New York Strip with Beef Demi-Glace with Sweet Potato Mash &
Green Beans
Just to point out: Shelly wanted to use a barbecue sauce, and the
vegetables.... well, that's a bad idea for COWBOYS. So you may need to
rethink your whole strategy. They decided to just go with it, but make
it a little manly. Meanwhile, Gordon's not exactly keen on the sides, so
how about adding a little heat, cayenne and small paprika. They've also
changed their demi-glace into a red pepper sauce. Five minutes until
plating... and the Reds' zucchini is not hot at all.
CHOW TIME! And after the steak sizzle settles... The winner.. by a score
of 75-26... BLUE TEAM!
ROUND 5 PRESSURE TEST: Fruit Tart
- Everyone has the same ingredients and a limited fruit pantry.
- 90 minutes to bake a fruit tart.
One of the teammates will be safe... and the Blue Team will decide which
one. They pick... OLIVIA.
It starts with a perfectly baked tart shell. The pastry cream needs to
hold its shape when it's slice. The fruit needs to look like gems atop
the custard, and the glaze needs to make the fruit pop.
- STEPHEN: Blueberry Tart with Apricot Glaze. Cracked tart. Loose cream.
Flavor's there.
- SHELLY: Berry Tart. Cream's a little loose. The shell is a little
under. But good job.
- CHRISTOPHER: Strawberry, Blueberry, Mint & Lemon Tart. Pastry is
crunch. Cream is loose. Tastes good.
- HETAL: Berry Tart with Raspberry Jam & Chocolate. Crust shrunk. Flavor
comes through.
No one nailed it perfectly... but Shelly and Hetal live to cook another
day.
ELIMINATED: ....
...
... in a shock, NO ONE! It was THAT CLOSE in terms of highs and lows.
But that means that the decisions are going to be that much harder.
