vs. Staib: Battle Short Rib

The
Challenger:
Chef Walter Staib, who began his career as a kitchen
apprentice in his native Germany. From there he cooked
in London, Paris, Sao Paulo, and Stade before settling
at the City Tavern in Philadelphia. You won't find his
love of Caribbean cuisine there, but you will find the
cuisine of another bygone era, as he celebrates the
colonial era of America with dishes from that era.
Today, though, all bets are off as he hopes to best Iron
Chef Bobby Flay.
Prepare for battle.

The Theme Ingredient: Beef short
ribs.
The Rules: Each chef must create a five-course
meal, with each course utilizing the theme ingredient, within 60
minutes. The judges will score the dishes on a 20-point scale: 10 points
taste, 5 points plating and presentation, 5 points creativity and use of
ingredient. The chef that best articulates the theme ingredient through
their dishes wins.
The battle clock is set at 60 minutes, which will start
when the Chairman, with full heart and empty stomach, utters the words
of his dear uncle.... "Allez cuisine!" Nin
And Battle Short Rib is ON in Kitchen
Stadium! The Chairman has brought some English cut single ribs as well
as giant slabs. Because is it constantly moving, it is darn though and
has to be broken down with time. We're going to have to bring out the
pressure cooker and some creative butchering in order to get these to a
palatable state.

Will Chef Staib finish his five in time?
He has the pepper pot, the short rib yam salad, taro patty with jerk
beef, roulade, and the mango number. That's five. He's done, but it goes
down to...
"Five seconds... three... two... one... "
And Battle Short Rib is history. Put it down and walk away.

Flay:
"Time is always a factor in Kitchen Stadium, but the short ribs made it
very very difficult."

Iron Chef Flay took us around the world
with short ribs. Chef Staib also went around the world, but also took us
on a trip to America's past. The end result... the four judges are
deadlocked. The Challenger's tribute to his culinary past or the Iron
Chef's world tour. Who takes it? Whose cuisine reigns supreme? The
verdict...

Iron Chef Bobby Flay. This was no contest at all, as
Bobby Flay applied taste, skill and pressure to a few
choice cuts of cow flesh and end up with a win in the
deal.
