June 5

Last week, we tested our baker's knowledge of pies. Brian and Francine ended up taking the ... pie, while Carlo ended up with pie in his face. Now nine bakers remain. With cookies in the offing, who will rise... and who will crumble?

SIGNATURE BAKE

In Week 2, you will fire up your ovens for one dozen cookies. You have 90 minutes to turn them out.

Elaine: Ginger Cookies
Effie: Rosemary Cherry Meyer Lemon Shortbread Cookies
Kolette: White Chocolate Macadamia Nut Cookies
James: Brutti ma Buoni with Hazelnut Ganache
Darlene: Red Rose Crumbles
Jeremy: Fat Pills
Brian: Cakey Chocolate Chip Cookies
Francine: Slap-Ya-Mama Chocolate Fudge Cookies
Whitney: Lemon Poppyseed Cookies

Paul likes Kolette's cookies, but they're very inconsistent. Effie's cookies were beautiful, and the rosemary wasn't too overpowering. James has a good eye for flavor. Darlene's crumbles are too crumbly. Jeremy's cookies were home runs. Now comes Elaine's cookies, which will be judged against Paul's mother's cookies... "I'm getting homesick now." Absolutely spot-on. Brian's cookies were under. His first batch was sitting in a tray next to his sink... and were actually better than his second bath. Francine's cookies... hit the judges at the end. It's complex. Whitney's mix was "too wet".

TECHNICAL BAKE: S'mores

You will be given the same ingredients, but very limited amount of information as to how to combine them. They will judge based on the finished product only.

Today's technical bake is sophisticated s'mores, s'mores that listen to classical music and watch indie films, from Marcela's recipe. The cookie and the chocolate have to be ready before the marshmallow is ready. And the marshmallow has to be the perfect consistency. The perfect graham cracker dough appears dry. Some bakers may try to wet the dough, but that'll make it too sticky and hard to work with.

You have two hours 15 to figure this out.

From worst to best...

9) James
8) Brian
7) Elaine
6) Darlene
5) Jeremy
4) Whitney
3) Kolette
2) Francine
WINNER: Effie

SHOW STOPPER: French Macaroon

You have to make 40 sandwiched macaroons with delicate crisp shell and a soft chewy center. You have four hours to make two types.

In trouble: James, Brian, and Kolette.

Brian: Coffee & Cream and Mint Chocolate Macaroons.
Kolette: Candied Ginger & Meyer Lemon Macaroons
Whitney: Mocha & Chai Tea Macaroons
James: Clementine & Earl Grey Tea Macaroons (Marcela doesn't like it, Paul does)
Jeremy: Strawberry & Peanut Butter Macaroons
Darlene: Black Sesame & Chocolate Cinnamon Macaroons
Francine: Drunken Orange & Raspberry Pistachio Macaroons
Elaine: Coconut Ganache & Lemon Buttercream Macaroons
Effie: Saffron Rose & Curried Coconut Macaroons

Over all three bakes, Effie tried. The Show Stopper stopped her cold. Did she do enough to earn this week's Star Baker? Elaine did well overall... Jeremy was a contender as well. At the bottom. Brian didn't do well on the technical, while Whitney was a shade under in BOTH the Technical and the Show Stopper.

Star Baker this week.... ELAINE!

But for one baker, the journey ends here. Leaving tonight... is WHITNEY. Again, she just underperformed through all three rounds. She's not executing properly. But keep at it. You've got the heart in you.

That's the way the cookies crumble. Next week, let'em eat cake.
